  • 100% Pinot Noir

Tasting notes:

  • A light style Pinot Noir which exudes elegance
  • Fruit driven, with typical Pinot Noir character of dark cherries and raspberries on the nose and on the palate
  • Pair with Salmon with LentilBeet Salad

Winemaking notes:

  • Harvested early in the morning and allowed to cold soak for 5 days at 11˚C
  • Fermented in open tank with gentle punch downs every 5 hours
  • 30% whole bunch fermented to created a more scented Pinot Noir
  • Post ferment maceration of 5 days before pressing in a basket press
  • Handled very delicately with only two rackings

Oaking regime:
12 months in 100% French oak, 2nd & 3rd fill

TSO2: 58 mg/l
