  •  100% Pinot Noir

Tasting notes:

  • This wine encapsulates the true characteristics of a classis Pinot Noir
  • Rich, full bodied with woody nose
  • Black Cherries and Florest floor notes on the palate.  Enjoy with Spiced Duck with Confit of Ragu or Mushroom Risotto

Winemaking notes:

  • Harvested early in the morning and allowed to cold soak for 5 days at 11˚C.
  • Fermented in open tank with gentle punch downs every 5 hours.
  • 30% whole bunch fermented to created a more scented Pinot Noir
  • Post ferment maceration of 5 days before pressing in a basket press.
  • Handled very delicately with only two rackings

Oaking regime:
12 months in 100% French oak, 2nd & 3rd fill.

TSO2: 103 mg/l
